Apple Cider Cake with Whipped Cream [Vegan]

Cooking Time




  • 3/4 cup vegan butter
  • 3/4 cup cane sugar
  • 2 tablespoons flour
  • 1/2 cup non-dairy milk
  • 1 tablespoon vanilla sugar
  • 1 teaspoon baking powder
  • 1 cup spelled flour


  • 6 apples
  • 2 packets vanilla pudding powder
  • 1 1/2 cup apple cider
  • 1 1/12 cup white wine
  • 1 cup vegan whipped cream
  • Cinnamon to taste



  1. Cream butter and sugar together
  2. Add flour, milk, vanilla sugar, baking powder and spelled flour
  3. Knead Quickly into a smooth dough
  4. Wrap in plastic wrap
  5. Refrigerate for 30 minutes
  6. Roll out dough on lightly floured surface
  7. Grease springform pan base and sides
  8. Line pan with dough and press dough against the sides of pan
  9. Then chill again for 1 hour


  1. For the pudding, prepare pudding according to package instructions using apple cider and white wine
  2. Rinse apples, wipe dry and peel and cut into cubes
  3. Mix apple pieces into pudding
  4. Spread apple pudding mixture over cake dough until smooth
  5. Bake in a preheated oven at 360°F for 60-70 minutes
  6. Remove cake from oven, place on a wire rack
  7. Allow to cool completely before topping with whipped cream
  8. Sprinkle cinnamon and serve!
